Cinnamon Rolls Tutorial

First of all, I’m not giving you a tutorial on the dough, I made it about two days ago. (It says good for about four days if you refrigerate it and keep it covered and punched down of course.)



But heres what to do after the dough!
First, remove your rings! And if you happen to be married or engaged, REALLY remove your rings! The dough likes to snatch them away from you when you least expect it, and it’s not something you want someone to bite into. Trust me, it stole one of mine and it took me 15min to dig through it and find it.
Wash the surface you’ll be rolling your dough on!
[I don’t have enough counter space in my apartment so I used the table, after I washed it.]

MOVING ON!
Roll your dough into a rectangle.



Melt an entire stick of butter and pour it over the dough.
Pour about a cup and a half to two cups of sugar over the butter.
And cover that with a very generous amount of cinnamon.
If it oozes out when you roll it, that’s good - clean up sucks though, find a helper and make them do it.



Slowly and carefully roll it, start at the bottom and work your way up.



Pinch the ends so it stays together.



Cover and I mean cover a pan in butter!
Then carefully cut each roll and place them in the buttery goodness.
They will get shushed down as you cut them, but just keep reshaping the dough as you cut it and as you add the rolls to the pan.



Cook at 375 for 15min.
They’ll look like this…



Once again I made my icing yesterday but I’ll share that if anyone asked.
Now eat the rolls! Eat them all!

Penne and Scallops in Vodka Parmesan sauce. (Tutorial)

Alright, you don’t have to use scallops, I originally wanted clams. You can use almost any seafood you want.

Here’s what you need:
Penne
Raw Baby Scallops [1 bag]
Ragu Parmesan Sauce
Bertolli Vodka Sauce
Seasoned Salt
Cayenne Pepper
Thyme [fresh is best]
Dried Sage
Heavy Whipping Cream
Minced Onions

Got all that? Alright.



STEP ONE:
Bring a pot of water to a boil and add in your penne - maybe a pinch of salt and pepper also.
Once the penne is getting soft throw in the scallops, when the pasta is done and the scallops are a golden/yellow color turn the stove to low heat and drain them.




STEP TWO:
Add the pasta back to the pan and add your dry ingredients, and the butter - just a big glob of butter.




STEP THREE:
The vodka sauce is optional, but if you do decide to use it - only use 1/4 of a cup.
Add however much ragu you’ll need to cover your pasta completely.
Mix it up and let it sit on low heat for about five minuets then add it about 2 tablespoons of whipping cream - stir that in and serve right away.


This stuff is sinful.

After looking around on the Internet I noticed most photographers begin a project when they get their first real camera, the most common being 365 days and 100 strangers. I decided I’d try the 365 days, so everyday for a year I’ll upload one self-portrait to my flickr and facebook account - the goal? To always do something different and improve my skills.

On poaching eggs.

Tonight I learned how to poach an egg. [For Eggs Benedict]


Just need; a pot of boiling water, a cap full of vinegar and a pinch of black pepper.

Once the water is boiling and you’ve added the vinegar and pepper, stir it with a spoon until the water is spinning like a tornado, then very very carefully drop the egg in, keep it spinning but not to roughly or you’ll break the yolk. When it looks like a tiny egg colored fetus, the egg is done. Scoop it out and put it aside.

Next is the Hollandaise sauce. :D

Disastrous as it may be, because moving the Iron Man 2 premier from London to LA was indeed disastrous,this apparently also effected the Nicolas Sparks based film “The Last Song” - I lol’d.

Regardless of the movies and depressed actors, its an amazing act of nature and one I am enjoying watching, from a distance.
